Peanut Butter Cookies, gluten free and flourless

Ingredients:

  • 2 cups peanut butter (creamy or crunchy or 1 of each)

  • 1 cup organic sugar (reserve 1/4 cup to dip balls of rolled dough)

  • 1 cup brown sugar

  • 2 eggs

  • 1 T vanilla extract

  • 1 tsp baking soda

Here’s How:

  1. Preheat oven to 350 and cover a baking sheet with parchment.

  2. Cream together the pb and sugar by hand, then add eggs and cream.

  3. Add vanilla and baking soda, mix thoroughly but just till combined.

  4. Using a teaspoon, make balls of dough, roll in sugar, place on parchment around 3 “ apart.

  5. Flatten with a fork, making a cross-hatch pattern to lightly flatten. They will continue to flatten while baking.

  6. Bake for approximately 12-15 minutes, cool on a wire rack and enjoy.
