Peanut Butter Cookies, gluten free and flourless
Ingredients:
2 cups peanut butter (creamy or crunchy or 1 of each)
1 cup organic sugar (reserve 1/4 cup to dip balls of rolled dough)
1 cup brown sugar
2 eggs
1 T vanilla extract
1 tsp baking soda
Here’s How:
Preheat oven to 350 and cover a baking sheet with parchment.
Cream together the pb and sugar by hand, then add eggs and cream.
Add vanilla and baking soda, mix thoroughly but just till combined.
Using a teaspoon, make balls of dough, roll in sugar, place on parchment around 3 “ apart.
Flatten with a fork, making a cross-hatch pattern to lightly flatten. They will continue to flatten while baking.
Bake for approximately 12-15 minutes, cool on a wire rack and enjoy.
