Purple Cabbage Kraut

This Kraut is particularly good for people on a low Fodmap diet. And being a fermented food, it is helpful due to its probiotic content from fermentation, which support gut health and immunity. It is also rich in vitamins A, C, and K, plus fiber, iron and antioxidants, which contribute to better digestion, skin health and bone strength.

Ingredients:

  • 3-4 cups red cabbage

  • 2 green onions

  • 1/2 T minced fresh ginger

  • 2 tsp sea salt (add more if needed)

Here’s How:

  1. Place about a 2-3” wedge of fresh peeled ginger in a food processor with 2 green onions that have been coarsely cut and pulse until finely chopped. Place in a large bowl.

  2. Using the slicer blade, (not the shredder) cut up the cabbage to yield about 4 cups and add to the bowl with the salt.

  3. Massage the mixture until it gets juicy and begins to soften and break down. (about 5-7 minutes.

  4. Taste to check if the amount of salt is good, adjust and stuff into a quart jar.

  5. Cover the mixture with a red cabbage leaf the size of the top of the jar, making sure everything is submerged under the liquid.

  6. Cover with lid and leave out on the counter for about 2-3 weeks. Taste to see if it is fermented, refrigerate and have a bite before each meal.
