Chocolate Walnut Flourless Cookie
Ingredients:
1/2 cup organic powdered sugar
4 heaping T unsweetened cocoa or cacao powder
1/8 tsp sea salt
1 egg white (room temperature) and you may not use the whole thing, but whip till it forms peaks.
1/4 cup chopped dark chocolate or chocolate chips
1/3 cup roasted walnuts (leave pieces whole)
Here’s How:
Allow egg white to sit at room temperature.
Sift first 3 ingredients into a bowl.
Roast walnuts at 350 for 7-8 minutes and let cool.
Leave oven on 350.
Chop or measure out 1/4 cup chocolate chips.
Place parchment on cookie sheet.
Whip egg whites until it forms a peak.
Mix all ingredients except slowly add the egg white last just to the point where the mixture holds together, there is no powder and it is as thick as possible. The batter tends to spread and the thicker batter will provide a more brownie like consistency.
Place 1 1/2 T portions spread out by 3” and let sit for 30 minutes.
Bake for 10-12 minutes.
After 5 minutes out of the oven, transfer to cooling rack.
