Chocolate Walnut Flourless Cookies

Ingredients:

  • ¾ cup + 2 T organic powdered sugar

  • ¼ cup unsweetened cocoa or cacao powder

  • 1/8 tsp sea salt

  • 1 egg white (room temperature)

  • 1/4 cup chopped dark chocolate or chocolate chips

  • 1/3 cup roasted walnuts (whole)

  • 1/8 tsp vanilla extract

Here’s How:

  1. Allow egg white to sit at room temperature.

  2. Sift first 3 ingredients into a bowl.

  3. Roast walnuts at 350 for 7-8 minutes and let cool.

  4. Leave oven on 350.

  5. Chop or measure out 1/4 cup chocolate chips.

  6. Place parchment on cookie sheet.

  7. Hand whip egg whites and vanilla until fully mixed.

  8. Slowly addthe egg white, just to the point where the mixture holds together, there is no powder and it is as thick as possible. The batter tends to spread and a thicker batter will provide a more brownie like consistency. Add chocolate chips and walnuts.

  9. Place 1 1/2 T portions spread out by 3” and let sit for 30 minutes.

  10. Bake for 10-12 minutes.

  11. After 5 minutes out of the oven, transfer to cooling rack.
