French Baby Green Lentil Salad
Ingredients:
1 1/2 cups raw baby green lentils, rinsed
1/2 red onion chopped
1/2 cup chopped greens of your choice (parsley, basil, even kale)
1/2 cup sugar snap peas cut into 1/2“ pieces
1 large carrot, chopped
1/2 red pepper chopped
(any veggies you enjoy can be chopped and added)
Dressing:
1 heaping T dijon mustard
2 garlic cloves chopped finely
4 T balsamic vinegar
1 T raspberry or rice vinegar
4 T extra virgin olive oil
1/2 tsp sea salt
fresh ground pepper
Here’s How:
Bring lentils to boil in 4 cups of filtered water, then simmer for several hours until done.
Chop veggies and place in a bowl.
Mix dressing in separate container and when lentils are done, place in bowl with veggies.
Dress and serve warm or chilled. Salt and pepper to taste.
