French Baby Green Lentil Salad

Ingredients:

  • 1 1/2 cups raw baby green lentils, rinsed

  • 1/2 red onion chopped

  • 1/2 cup chopped greens of your choice (parsley, basil, even kale)

  • 1/2 cup sugar snap peas cut into 1/2“ pieces

  • 1 large carrot, chopped

  • 1/2 red pepper chopped

  • (any veggies you enjoy can be chopped and added)

Dressing:

  • 1 heaping T dijon mustard

  • 2 garlic cloves chopped finely

  • 4 T balsamic vinegar

  • 1 T raspberry or rice vinegar

  • 4 T extra virgin olive oil

  • 1/2 tsp sea salt

  • fresh ground pepper

Here’s How:

  1. Bring lentils to boil in 4 cups of filtered water, then simmer for several hours until done.

  2. Chop veggies and place in a bowl.

  3. Mix dressing in separate container and when lentils are done, place in bowl with veggies.

  4. Dress and serve warm or chilled. Salt and pepper to taste.
