Smashed Brussel Sprouts
Ingredients:
2 cups brussels sprouts
2 tsp dijon mustard
2 T olive oil
3 T finely grated parmesan or pecorino romano
a few dashes of hot sauce (optional)
juice of lemon, add some lemon rind if you want
fresh ground pepper to taste
Here’s How:
Boil enough water to cover whole Brussel sprouts after removing root tips.
Boil for 5-7 minutes. Drain and pat dry.
Using a mason jar, carefully smash the cooked Brussels.
Mix up sauce, dip Brussels in and place on a greased or cookie sheet with parchment paper and roast in the oven at 425 for 7-10 minutes.
