Smashed Brussel Sprouts

Ingredients:

  • 2 cups brussels sprouts

  • 2 tsp dijon mustard

  • 2 T olive oil

  • 3 T finely grated parmesan or pecorino romano

  • a few dashes of hot sauce (optional)

  • juice of lemon, add some lemon rind if you want

  • fresh ground pepper to taste

Here’s How:

  1. Boil enough water to cover whole Brussel sprouts after removing root tips.

  2. Boil for 5-7 minutes. Drain and pat dry.

  3. Using a mason jar, carefully smash the cooked Brussels.

  4. Mix up sauce, dip Brussels in and place on a greased or cookie sheet with parchment paper and roast in the oven at 425 for 7-10 minutes.
