Cashew Milk
Cashew milk is a dairy free, very satisfying, creamy milk. It provides antioxidants (lutein, zeaxanthin) for eye health, plus magnesium for bone and nerve function. It has a neutral taste and easy to make at home.
Yield 1 1/2 quarts
Ingredients:
2 cups raw cashews (sold at Costco or Trader Joe’s at the best price)
2 pitted medjool dates
3-4 cups filtered water for soaking
3 cups filtered water to blend
Here’s How:
Place cashews, dates and soaking water in a bowl or 4 cup measuring cup and soak for 8 hours.
Drain water.
In a bullet, vita mix or blender, place 1/2 the mixture (with 1 of the dates) in a blender and blend until completely smooth.
Blend the other half, storing the milk in a jar in the fridge.
Use to make matcha latte’s, hot cacao or cocoa, or in your coffee. Drink plain as it is delicious. ( I use just 1/4 to 1/3 cup, add a touch of water as it thickens) and heat it in a small saucepan and then froth it into mixture of what you are making.
