Roasted Cauliflower with lemon

This recipe can be made with any of the beautiful colors of cauliflowers, purple, yellow, white. This yellow one contains 25 times more beta carotene (Vitamin A) than white cauliflower. You could also use cabbage or brussel sprouts for this recipe.

Ingredients:

  • 1 head of cauliflower

  • 1 lemon, rind removed and then juiced

  • 4 garlic cloves, chopped finely

  • 1-2 T olive oil

  • salt and pepper to taste

  • a pinch of red pepper (optional)

Here’s How:

  1. Preheat oven to 400.

  2. Cut cauliflower into florets or steaks ( 1 1/2” thick)

  3. Remove lemon rind, juice the lemon and place in a small bowl.

  4. Add olive oil, garlic, and remaining seasoning.

  5. Drizzle dressing over cauliflower, toss and place on a cookie sheet.

  6. Bake for 15-20 minutes.
