Cucumbers with a Bite
This cucumber dish was inspired by our recent trip to Joshua Tree where we frequented The Copper Room Restaurant for their creative, delicious dishes.
Ingredients for 4:
4 Persian cucumbers sliced 1/4” thick
1/3 cup finely chopped toasted almonds
1/4 cup olive oil infused with 1-2 garlic cloves, 2 tsp chili seasoning of your choice
salt to taste
Here’s How:
Toast almonds and pulse in food processor when cool till finely ground with little pieces too. (not a powder)
Place garlic cloves in processor and pulse, add, chili seasoning and turn on and slowly add olive oil.
Slice cucumbers and mix all ingredients in a bowl, chill and serve.
