Cucumbers with a Bite

This cucumber dish was inspired by our recent trip to Joshua Tree where we frequented The Copper Room Restaurant for their creative, delicious dishes.

Ingredients for 4:

  • 4 Persian cucumbers sliced 1/4” thick

  • 1/3 cup finely chopped toasted almonds

  • 1/4 cup olive oil infused with 1-2 garlic cloves, 2 tsp chili seasoning of your choice

  • salt to taste

Here’s How:

  1. Toast almonds and pulse in food processor when cool till finely ground with little pieces too. (not a powder)

  2. Place garlic cloves in processor and pulse, add, chili seasoning and turn on and slowly add olive oil.

  3. Slice cucumbers and mix all ingredients in a bowl, chill and serve.
