Kitchari

This is an Ayurvedic healing satisfying vegetarian dish that is filled with protein and healthy carbohydrates.

  • Ingredients:

  • 1 cup basmati rice (soaked overnight)

  • 2 cups yellow mung dal (soaked overnight)

  • 3 T ghee

  • 4 T kitchari spice mix or the below spices:

  • 1 tsp black mustard seeds

  • 1 tsp cumin seeds

  • 1 tsp turmeric powder

  • 1 tsp cumin

  • 1 tsp coriander powder

  • 2 tsp sea salt

  • 4-5 thin slices of fresh ginger root

  • 4 cups of veggies of your choice (carrots, celery, cabbage, broccoli, kale, cauliflower, green beans, and more), cut up into bite sized pieces

  • 8 cups water, 2 1/2 cups for the rice, 5 1/2 cups for the mung dal.

Here’s How:

  1. In a hot water pot, heat 8 cups of water to boil.

  2. In a large heavy pot, heat the ghee on medium heat. Sauce the kitchari spices until fragrant, add the drained dal and stir until the mixture almost starts to stick to the bottom of the pan.

  3. Add the 5 1/2 cups water to the mixture, cover and simmer for about 30 minutes.

  4. Cook rice in a separate smaller pot with 2 1/2 cup of water until done, about 20-30 minutes.

  5. Cut up veggies and add to dal mixture after 35 minutes and continue to cook for 45-60 minutes until veggies are done.

  6. Serve the rice on the bottom of the bowl and the dal mixture on top.

* We prefer to cook the rice and dal separately, although traditionally they are cooked and eaten all mix
