Turkey Meat Loaf
This recipe was created by my dear nephew who has a limited diet but has been very creative in eating healthily to support his low fodmap eating style. It is tasty for us all, and if not concerned about the fodmap, you can substitute and add your favorite vegetables.
Ingredients:
1.5 lb ground organic turkey
2 large carrots
4-5 scallions or green onions
2 large collard leaves with stems
2 T oyster mushrooms
a chunk of sweet potato (2-3 “ in height, and the width of a medium sweet potato)
1 bunch of fresh dill
1/2 bunch parsley or cilantro
1 tsp sea salt
1-2 T avocado or extra virgin olive oil
Here’s How:
Preheat oven to 375.
Place turkey in a bowl and set aside.
In a food processor or Ninja, grind the carrots, then scallions, then collards and sweet potato.
Add oyster mushrooms, herbs and seasoning.
Mix into ground turkey and place in a greased baking dish (8/8) or use parchment paper.
Bake for an hour. Cool and cut into portions to eat and store in glass container in fridge until ready to
eat.
You can enjoy this with avocado mayonnaise or a dip of your choice in my dips and dressings section (if not following the low fodmap diet) and a green salad.
