Spinach Arugula Pesto
Ingredients:
- 6 cups spinach 
- 3 cups arugula 
- 1/2 cup walnuts 
- 2 garlic cloves 
- 2 tsp grated lemon rind 
- 2 T fresh lemon juice 
- 1/4 cup grated parmesan 
- 2-3 T nutritional yeast 
- 1/2 tsp sea salt 
- fresh ground pepper 
- 3 T extra virgin olive oil 
Here's How:
- Place walnuts, garlic and cheese in the food processor and blend. 
- Add several handfuls of greens at a time to blend. 
- Add remaining ingredients except olive oil which can be added slowly while processor is running. 
- Taste and adjust seasonings.
