Hot Cocoa or Hot Cacao!
As the weather cools and the days grow darker, our whole being craves something warming and soothing. Here's a simple hot cocoa recipe that's sure to satisfy. It's yummy and nutritious. Cocoa is loaded with anti-oxidants, stevia balances blood sugar, and if you use cow's milk or coconut milk, you can increase your calcium! You can also try coconut dream milk that's enriched with Vitamins A, D, B12 and Calcium.)
Ingredients:
1 T organic quality cacao or cocoa powder (cacao is unprocessed, the beans are raw and roasted at lower temperatures, richer in antioxidants, iron and magnesium)
5-7 drops of liquid stevia (chocolate or vanilla creme) or a packet of stevia powder, 2 tsp xylitol sweetener
1/3 cup home made cashew milk (see recipe) or 2/3 cup organic almond, rice, or coconut dream milk (you can add hot water or a combination of milk and water)
Sprinkling of cinnamon
A pinch of cayenne (optional)
Here's how:
Place dry ingredients in a jar with a lid or cup you plan to use.
Add 1/4 of the heated milk, use frothed to mix or cover and shake vigorously.
Heat in small pot and slowly add the rest of the milk. Makes one cup of cocoa.
Tips: Place dry ingredients in a jar and take it with you to work. Slowly add some hot water to the mixture, then shake and pour into mug. Add hot milk and enjoy! You can use a battery powered whisk to froth it up!
Another Tip: Stevia and xylitol may be found at New Seasons Market, Whole Foods, and in the Nutrition department at Fred Meyer, or order on line from Amazon.
