Dark Chocolate Bran Muffins
If you are gluten free, you can make these muffins with almond flour instead of bran. I love the insoluble fiber of the bran that keeps me regular! Each muffin contains 80 calories and 95 grams of fiber.
Ingredients:
3 cups wheat bran
1 tsp baking powder
1-2 tsp cinnamon
1/4 heaping cup cacao powder
2-3 T allulose or other granulated sweetener (cane sugar, xylitol, monk fruit, coconut sugar, sucanat)
1/8 cup cacao nibs (optional)
3 eggs
1/2 cup greek yoghurt or water
1/2 cup filtered water
2 tsp vanilla extract
1/2 cup unsweetened apple sauce
1 T ghee, melted (optional)
1 dropper of dark chocolate stevia (or 2 T allulose or monk fruit)
1 3 oz dark chocolate bar, chopped or 1/2 cup unsweetened dark chocolate chips
Here’s How:
Preheat oven to 350 and grease muffin tin or put in muffin liners in each slot.
Mix wet ingredients in 1 bowl (melt ghee and add to wet ingredients) and dry ingredients in the other.
Chop chocolate bar. Add 1/2 of it to muffin mix and blend.
Combine wet and dry and spoon into the muffin tin.
Sprinkle with remaining chopped chocolate and bake for approximately 15 minutes.
Cool on a muffin rack.
