Cornbread, Gluten Free

Ingredients:

  • 1 1/2 cups yellow corn meal

  • 1/2 cup gluten free flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp sea salt

  • 1 1/2 cups unsweetened coconut milk

  • 2 egg

  • 6 T ghee

Here’s How:

  1. Preheat oven to 450.

  2. Place 6 T ghee in a large cast iron skillet and heat in preheated oven for 5 minutes.

  3. Mix dry ingredients in a bowl.

  4. Mix wet ingredients in another bowl, then blend with dry ingredients.

  5. remove the hot skillet from the oven and pour mixture into skillet on top of melted ghee, allowing the ghee to spill over onto the top of the batter.

  6. Bake for 20-25 minutes or until the cornbread is browned on top. Remove hot skillet from oven, and let it cool for 5 minutes before serving.
