Chocolate Mini-Torte
Ingredients:
- 2 T ghee 
- 1T cocoa powder 
- 1/2 cup dark chocolate chips 
- 1 organic egg 
- 1 egg yolk 
- 1 tsp vanilla extract 
- 1 1/2 T coconut sugar or monk fruit 
- 2 T almond or coconut flour 
- 4 squares of dark chocolate 
- 1/2 cup puffed strawberries or raspberries 
- 1/2 cup plain greek yoghurt sweetened to your taste with monk fruit or stevia (optional) 
Here’s How:
- Preheat oven to 425. 
- Melt first 3 ingredients and set aside. 
- Add eggs and vanilla extract. 
- Mix in flour and sweetener. 
- Divide mixture into 3-4 ramekins that have been greased and for extra caution, place pre-cut parchment circles in the bottom of ramekin. 
- Place square of chocolate in center of each ramekin and press down. 
- Bake in oven for 5-7 minutes. 
- Let cool, remove from ramekin, and sprinkle chopped puffed berries on top. Dust with cocoa powder 
- Serve with a dollop of greek yoghurt if desired.
