Chicken Salad, Low Fod Map
My nephew was diagnosed with MS several years ago and went on a quest for healing. He discovered that dramatically altering his diet, had a very positive impact. Here’s a recipe he makes that is both delicious and very low on the Fod Map Diet.
Ingredients:
- 1 bunch of chopped dill and either cilantro and/or parsley 
- 4-5 scallions sliced 
- 2 medium to large carrots chopped up in a food processor, (ninja, cuisinart, etc) 
- 3-4 large collard leaves chopped 
- 1 medium watermelon radish chopped 
- Similar amount of chopped purple or white daikon or if not available, red radish 
- 1 T apple cider vinegar 
- 1/2 tsp sea salt 
- 2-3 T olive and avocado oil 
- Juice from half a lemon 
- 2-3 strips of chopped lem 
Here’s How:
- Preheat oven to 375. 
- Roast 2 large chicken breasts by coating with avocado oil and salt, bake 1 hour. Dice when cool. 
- Prep rest of salad: 
- Mix it all with the diced chicken breasts
