Chicken Salad, Low Fod Map

My nephew was diagnosed with MS several years ago and went on a quest for healing. He discovered that dramatically altering his diet, had a very positive impact. Here’s a recipe he makes that is both delicious and very low on the Fod Map Diet.

Ingredients:

  • 1 bunch of chopped dill and either cilantro and/or parsley

  • 4-5 scallions sliced

  • 2 medium to large carrots chopped up in a food processor, (ninja, cuisinart, etc)

  • 3-4 large collard leaves chopped

  • 1 medium watermelon radish chopped

  • Similar amount of chopped purple or white daikon or if not available, red radish

  • 1 T apple cider vinegar

  • 1/2 tsp sea salt

  • 2-3 T olive and avocado oil

  • Juice from half a lemon

Here’s How:

  1. Preheat oven to 375.

  2. Roast 2 large chicken breasts by coating with avocado oil and salt, bake 1 hour. Dice when cool.
