Blackened Trout
Ingredients:
- 1 lb of wild trout, cut into 2 pieces (for ease of flipping in pan) 
- 3 T ghee or unsalted butter, melted 
- 1 T paprika, 2 tsp dry mustard, 1/2 tsp cayenne, 1 tsp cumin, 1 tsp dried thyme, salt and pepper to taste 
Here's How:
- Mix seasonings together and set aside. 
- Melt butter in heavy large skillet and coat both sides of fish in butter and place on plate skin side up. 
- Generously sprinkle seasoning on both sides of fish. 
- Heat pan on medium high and place fish skin side up and sauce for 7 minutes, then flip and saute for another 5-7 minutes insuring both sides are browned nicely.
